Fried Onion Dip

Ingredients

  • 4 Tbsp butter 

  • 1 medium-size sweet onion, cut into 1/2 inch slices

  • Salt & pepper to taste

  • 3 garlic cloves, chopped 

  • 1 tsp. honey 

  • 1/4 cup dry white wine 

  • 3/4 cup sour cream 

  • 1/4 cup (2 oz.) cream cheese, softened 

  • 1 Tbsp fresh chives, finely chopped (save some for garnish) 


Preparation

  • To make clarified butter, melt butter in a small saucepan over medium heat 2 to 3 minutes until foamy and brown. Strain mixture into a large skillet, being sure to leave any solids in the bottom of the saucepan.   


  • Cook onions, with 3/4 tsp salt and 1/4 tsp pepper in reserved clear butter over medium-high heat. Stir the onions occassionally for 10 minutes or until the onion edges are dark and the slices are crisp in spots. 


  • Stir in garlic and honey then cook for 1 minute. Add wine and bring mixture to a simmer and cook for 3 minutes until the liquid thickens. 


  •  Remove from heat and let cool. Remove onions from the skillet, chop finely and set aside. Keep pan juices for later. 


  • In a medium bowl, mix together sour cream and cream cheese until combined. Add onions and pan juices. Stir in chives and salt to taste. Cover and  hill for an hour before serving. 


  • Garnish with left over chives. Recipe makes about 2 cups of dip
