Mushroom Almond Pâté

Ingredients

  • 1/4 cup slivered almonds 

  • 2 Tbsp olive oil 

  • 1 cup onion, chopped 

  • 1 clove garlic, minced 

  • 6 cups (about 14 oz) mushrooms, sliced

  • 1 tsp salt 

  • 1/2 tsp dried thyme 

Preparation

Preheat oven to 350 degrees.  


  • Spread  almonds in a shallow pan and toast them in the oven for about 5 minutes or until lightly browned. Set aside. 


  • In a large skillet, heat oil over medium heat. Add onion, garlic, mushrooms, salt and thyme. 

 

  • Cook, stirring occasionally, until the onion is soft and most of the pan juices have evaporated. 


  • Place the toasted almonds in a food processor or blender and blend until you form a paste. Add the mushroom mixture and blend until the pate is smooth. 


  • Serve on crackers or with veggies.
