Mushroom Almond Pâté

Ingredients
1/4 cup slivered almonds
2 Tbsp olive oil
1 cup onion, chopped
1 clove garlic, minced
6 cups (about 14 oz) mushrooms, sliced
1 tsp salt
1/2 tsp dried thyme
Preparation
Preheat oven to 350 degrees.
Spread almonds in a shallow pan and toast them in the oven for about 5 minutes or until lightly browned. Set aside.
In a large skillet, heat oil over medium heat. Add onion, garlic, mushrooms, salt and thyme.
Cook, stirring occasionally, until the onion is soft and most of the pan juices have evaporated.
Place the toasted almonds in a food processor or blender and blend until you form a paste. Add the mushroom mixture and blend until the pate is smooth.
Serve on crackers or with veggies.
