Queso Fundido

Ingredients

  • 8 oz. Chorizo sausage

  • 1 Jalapeño pepper, chopped 

  • 4 oz. canned green chiles, chopped 

  • 1/2 Tsp. cumin 

  • 1/4 Tsp. cayenne pepper 

  • 3 Tbsp. flour 

  • 1 1/2 Cups chicken broth 

  • 2 Cups mozzarella or Oaxaca cheese, shredded 

  • 1 Cup Monterey Jack cheese, shredded 

Preparation


  • Cook chorizo in a medium pot over medium-high heat until fat begins to render, about 5 minutes. 


  • Add jalapeño, chilies, cumin and cayenne. Cook, stirring occasionally until jalapeño softens (around 2 minutes). Stir in flour and cook, stirring until the flour is slightly toasted (about 2 minutes).  


  • Add broth and bring to a boil. Reduce heat to medium and stir in cheese. Cook, stirring occasionally until cheese melts and the mixture is creamy (around 3 minutes).
