Queso Fundido

Ingredients
8 oz. Chorizo sausage
1 Jalapeño pepper, chopped
4 oz. canned green chiles, chopped
1/2 Tsp. cumin
1/4 Tsp. cayenne pepper
3 Tbsp. flour
1 1/2 Cups chicken broth
2 Cups mozzarella or Oaxaca cheese, shredded
1 Cup Monterey Jack cheese, shredded
Preparation
Cook chorizo in a medium pot over medium-high heat until fat begins to render, about 5 minutes.
Add jalapeño, chilies, cumin and cayenne. Cook, stirring occasionally until jalapeño softens (around 2 minutes). Stir in flour and cook, stirring until the flour is slightly toasted (about 2 minutes).
Add broth and bring to a boil. Reduce heat to medium and stir in cheese. Cook, stirring occasionally until cheese melts and the mixture is creamy (around 3 minutes).
