Mini Baked Potatoes with Blue Cheese

Ingredients

  • 20 Small new or salad potatoes

  • 1/4 Cup Oil

  • Salt 

  • 1/4 Cup Crumbled blue cheese, or strong flavored cheddar

  • 2 Tbsp. Chives, chopped

  • 1/2 Cup Sour cream

Preparation


Prep: Preheat oven to 350. Wash and dry potatoes. 


  • Toss with the oil in a bowl to coat. Sprinkle potatoes with salt and coat slightly. Spread out on a baking sheet. Bake for 45-50 minutes or until tender. 


  • In a small bowl, combine the sour cream and cheese and mix well. 


  • Cut a cross in the top of each potato (careful not to burn yourself). Press gently with your fingers to open the potato. Top each with a generous helping of the cheese mixture. Serve hot or leave to cool to room temperature.
