Quiche Lorraine

Ingredients
9 Inch Pastry pie crust
12 Slices bacon, crisply cooked and chopped
1 Cup Swiss cheese (4 oz) shredded
1/3 Cup Onion finely chopped
4 Eggs (or egg beaters)
2 Cups of half & half
3/4 tsp. Salt
1/4 tsp. Pepper
1/8 tsp. Cayenne pepper.
Preparation
Prep: Preheat oven to 425. Sprinkle chopped bacon, cheese and onion in pastry-lined pie plate.
Slightly beat eggs, then beat in remaining ingredients.
Pour egg mixture into pie plate. Bake uncovered for 15 minutes. Then reduce oven temperature to 300. Continue baking until knife inserted halfway until comes out clean. About 30 minutes. Let stand for 10 minutes before cutting.
