Savory Corn Waffles with Spiced Bacon

Ingredients

  • 8 Strips of bacon, chopped

  • 1 Tbsp Brown Sugar

  • 1 tsp Chili powder

  • 1 Cup Cornmeal

  • 1 Cup Beer

  • 1/2 Cup Flour

  • 1/2 tsp Baking powder

  • 1/2 tsp Salt

  • 1/2 Cup Purchased Salsa

  • 1 Jalapeno, seeded and minced

  • 1/2  Cup Sour Cream

  • 1 tsp Smoked Paprika

  • 1 Tbsp Green Onions, chopped

Preparation

  • Stir together cornmeal and beer.  Let sit for 15 minutes so cornmeal absorbs beer. 


  • Cook bacon until crisp.  Transfer it to a paper-towel-lined plate; reserve drippings.  Add brown sugar and chili powder to skillet along with cooked bacon.  Cook, stirring until sugar melts and spices coat bacon.


  • Preheat waffle iron


  • Whisk together flour, baking powder, and salt; stir into cornmeal along with bacon, 2 Tbsp drippings, salsa and Jalapeno.


  • Coat waffle iorn with bacon drippings. 


  • Scoop 1 Tbsp waffle batter onto each iron section and cook until crisp.  Repeat until all batter is used.


  • Mix together sour cream, paprika and green onions to use as a dipping sauce.
