
Savory Corn Waffles with Spiced Bacon

Ingredients
8 Strips of bacon, chopped
1 Tbsp Brown Sugar
1 tsp Chili powder
1 Cup Cornmeal
1 Cup Beer
1/2 Cup Flour
1/2 tsp Baking powder
1/2 tsp Salt
1/2 Cup Purchased Salsa
1 Jalapeno, seeded and minced
1/2 Cup Sour Cream
1 tsp Smoked Paprika
1 Tbsp Green Onions, chopped
Preparation
Stir together cornmeal and beer. Let sit for 15 minutes so cornmeal absorbs beer.
Cook bacon until crisp. Transfer it to a paper-towel-lined plate; reserve drippings. Add brown sugar and chili powder to skillet along with cooked bacon. Cook, stirring until sugar melts and spices coat bacon.
Preheat waffle iron
Whisk together flour, baking powder, and salt; stir into cornmeal along with bacon, 2 Tbsp drippings, salsa and Jalapeno.
Coat waffle iorn with bacon drippings.
Scoop 1 Tbsp waffle batter onto each iron section and cook until crisp. Repeat until all batter is used.
Mix together sour cream, paprika and green onions to use as a dipping sauce.
