Spicy Soy-Apple Glazed Meatballs

Ingredients

Spicy Meatballs 

  • 1 1/2 lbs Ground Chicken or pheasant

  • 1/2 Onion, minced

  • 3 Garlic cloves, minced

  • 1 tsp. Salt and Pepper

  • 1/4 Cup Parsley, chopped

  • 1/2 Cup Panko bread crumbs

  • 1/2 Cup Parmigiano-Reggiano cheese

  • 1 Egg

Apple Glaze 

  • 1 Cup Apple juice

  • 1/4 Cup Reduced-sodium soy sauce

  • 3 Tbsp. Brown sugar, packed

  • 1 1/2 tsp. Cornstarch

  • 1 tsp. Ground ginger

  • Dash of cayenne pepper

  • 6 Green onions, sliced

Preparation

Prep: Preheat oven to 375.

Mix together all meatball ingredients until combined (do not over-mix). Form into 1-1/2 " meatballs.


  • In an oven proof skillet, heat olive oil over med-high heat. Add meatballs and cook until browned on all sides 8-10 minutes. Transfer to oven and bake 5 minutes.


  • In a bowl, combine juice, soy sauce, sugar, cornstarch and ginger. Heat glaze in skillet over medium heat until thickened and bubbly. Cook and stir for 2 more minutes. 


  • Add meatballs to glaze making sure they are coated. Transfer to serving dish. Top with green onions.


  • Makes approximately 40 meatballs
