Zucchini Triangles

Ingredients

  • 4 Large eggs 

  • 1/2 Cup Vegtable oil 

  • 1 Cup Buttermilk biscuit mix 

  • 1 tsp. Salt 

  • 1/2 tsp. Dried thyme

  • 1/8 tsp. Cayenne

  • 1 Lbs. Medium-size zucchini, 

  • 2 Carrots, peeled and shredded 

  • 1 Small onion, finely chopped. 

  • 3/4 Cup Jarlsberg cheese, shredded

Preparation

Prep: Preheat oven to 350.

Coat 13 x 9 x 2 inch baking pan with cooking spray. 


  • Slice zucchini lengthwise then thinly slice making half discs


  • In a large bowl, whisk eggs and oil together. Whisk in biscuit mix, salt, thyme and cayenne. Stir in zucchini, carrot, onion and cheese. Spread over prepared pan. 


  • Bake in oven for 25 minutes or until set (internal temp. around 150). Let it sit for 10 minutes. 


  • Cut into twenty-four 2 inch squares. Then cut each square diagonally in half to make a total of 48 triangles. Serve warm or at room temperature. 


  • Makes around 4 dozen, so feel free to half recipe
